Back to School Breakfast...

Man, where did the summer go? I can't believe the kiddos have already been in school a whole week?! I need some back to school breakfast ideas!!! What are y'all cooking at your house? My oldest loves French Toast and this is his favorite recipe! It's my favorite because it's quick and easy!!!
Favorite French Toast
4 eggs
3/4 cup milk
3 Tbs. brown sugar
1 tsp. ground nutmeg
12 slices white bread
1 Tbs. ground cinnamon
Toppings: syrup, powdered sugar, whipped cream, strawberries, etc...

In a large mixing bowl, beat the eggs. Add the milk, brown sugar and nutmeg; stir well to combine.
Soak bread slices in the egg mixture until saturated. Heat a lightly oiled griddle or frying pan over medium high heat. Brown slices on both sides, sprinkle with cinnamon and serve hot. Add whatever toppings you desire. Enjoy!

Im a big believer in a hearty breakfast for my boys...some of our favorites are Aztec quiche with fruit or biscuits and gravy with sausage or whole wheat waffles, pancakes or French toast. Oatmeal and cinnamon toast is always good, too. Then I have about four breakfast casseroles I rotate thru the schdule.

This is my son's first year of all day school so I really want him to eat a good breakfast. So far, I have done the following:

Breakfast quesadillas (tortillas, scrambled eggs, chopped up cooked sausage and cheese). You can make all of it the night before, roll it up in the am and assemble with cheese, pop in microwave for about 1:30.


In a pinch, those breakfast sandwiches in the frozen food section are good fillers. My son loves the pancake ones that are rolled up with sausage and egg in them. I think they are Aunt Jemima.

I always try to have fresh fruit out, too. Breakfast first and then he will usually eat a banana on the way to school.

BTW, if you have good ideas to send to school for lunch please post!

Thanks April for the awesome ideas!!! My son is running Cross Country this year and really needs all extra calories he can get! I appreciate your tips! My kiddos are pretty boring when it comes to lunch. I do have a folder of lunch ideas, even though I don't get to use them much. I'll keep you posted!
