Kathy's menu - week 25

This is a week full of new recipes! What can I say - I'm in a serious cooking mood! I'll keep you posted on our reviews! Stay tuned...

Monday - Steak Tips with Mushroom Sauce, Baked Potatoes, Salad, roll

Tuesday - Bifanas (Pork Sandwiches), Garlic Fries

Wednesday - Grandma Dean's Chicken and Dressing

Thursday - Garlic Swiss Steak, Crusty Bread

Friday - Pulled Pork Sandwiches with White BBQ Sauce, Ranch Style Beans

Saturday - Corn Dog Muffins, Tator Tots

Breakfast - To Die For Blueberry Muffins
Dessert - Butterfinger Brownies

Taco Chicken with Spanish Rice

Well, I know it's been awhile since I've posted...haven't really had anything exciting to post...but dinner tonight was soo yummy, or 'the bomb' as I like to put it!! Of all places, I got this recipe from my local HEB! They always cook up wonderful meals that are easy and quick, and best of all, I get to taste test them before I actually cook them!! I'm all about that one!

Here it is! Hope you enjoy as much as we did!!

Taco Chicken with Spanish Rice

1 cup sour cream
1 jar (7 oz.) green chili salsa
2 tablespoons fresh cilantro, chopped
1 pack taco seasonings mix
4 chicken breast (I used 6)
1 bag HEB steamable spanish style rice (cook according to package)

Combine sour cream, salsa, cilantro and 1 teaspoon taco seasoning. Mix in bowl, stirring well. Cover and chill. THIS I WOULD CHANGE AND USE THE RANCH CILANTRO FROM THE PULLED PORK SALAD!!!

Toss chicken with remaining taco seasoning.

Cook chicken in a large non-stick skillet coated with veg. spray over medium-high heat until done. I CUT UP THE CHICKEN BREAST INTO SMALL BITE SIZE PIECES SO THAT IT WOULD COOK THROUGH.

Serve immadiately with Spanish rice and seasoned sour cream dip.

I ACTUALLY MADE TORTILLAS, WE PUT THE RICE, CHICKEN, THEN THE SOUR CREAM DIP! IT WAS GREAT!! NEXT TIME I'LL PUT ON A BED OF LETTUCE AND EAT IT LIKE A SALAD!!

This is a for sure keeper!! All the picky kiddos gobbled it up and asked for 2nds...there were NO leftovers!!!

Taste Test Results - Week 8


Well 5 HUGE stars for the Sweet Pork Salad with Cilantro Dressing!!!!!! What an awesome combination of flavors!!! Thanks Jenny for a great recipe!!! The only thing I did different was that I tore the tortilla on the bottom into bite size pieces. I hate using a knife in my salads! ;) lol... This definitely makes my keeper list!

Taste Test Results - Week 7




Well, the results are in for the Honey Lime Chicken Enchiladas! They were awesome!!! They have a very unique flavor. This has definitely made our "keeper" list for sure!!! The only change I would make would be to halve the honey - it was a little too sweet with 6 Tbsp. I think 3 would be just perfect!!! Oh yeah, we also used corn tortillas, since we like those best. Thanks to Brittany , over at The Sisters' Cafe, for an awesome recipe!!! There are many more recipes on their site that I can't wait to try!!!

Taste Test Results - Week 6


Well, the results are in for the Chicken and Bacon Shish Kabobs and the Garlic Beef Enchiladas! We gave both meals 4 1/2 stars! Both are definitely worth your time to try!!! Both meals made our "keepers" list! We will definitely be making both meals again! Let me know how you like them if you ever get around to making them. You won't be sorry, if you do!!! :o)

I made this last week and it was awesome!!! This photo and recipe is from Canary Girl. Trust me - it tastes as good as the photo looks!!! yummm… Even my picky kids loved it!!!

Taste Test Results - Week 4


Well, we made Pioneer Woman's Brisket and I'm sad to say that it's not a "keeper" in our house. Now don't get me wrong, it had a very good flavor. I just have to realize that I'm a Texan, and us Texans prefer our brisket with a dry rub. So, my search for the "brisket keeper" continues... If you have any rub recipes, please send them my way!

The results are IN...

So...tonight I made the French Onion Meatballs....served over egg noodles. I thought it was wonderful, but my kiddos didn't like it very much. The gravy was....hmmm...don't know how to put my finger on it, but more of a 'grown up' kinda gravy. Dad wasn't here to try it, so, I have no idea how he'll feel about it. Will I make it again, probably not.....

We've been taste testing....

Roasted Garlic Cauliflower
I am 37 years old and have never tasted cauliflower in my entire life! Just the thought of it made my stomach turn. Well, I'm here to tell you that I absolutely LOVED this recipe!!! It definitely gets 5 stars!!! My kids even liked it!

Slow Cooker Chicken and Dumplings
We liked this but felt like it needed more salt, pepper, and maybe some veggies. We gave this four stars.

The Pioneer Woman's Favorite Sandwich
This was good but maybe next time we'll have it on a different kind of bread. We're not big Rye bread eaters. We gave this four stars as well.

Dorito Chicken from Mommy Cooks
This was really good but it tasted a lot like our King Ranch Recipe! No1here and I gave it 4 1/2 stars but our second son gave it 5+ stars!!! He loved it!!! The things I did different... I sautéed my onions first. I only used 3 chicken breasts. I used about 10 oz. of Dorito chips. I mixed it all together and then put the cheese on top.

Taste Test Tuesday Result...

Okay, I have to admit I was a little skeptical about this recipe at first. But, this No-peek Casserole was the bomb!!! My whole family loved it and that's really saying something if my picky bunch will eat it. The only thing I would do different next time is to do like Cindy said and add 2 cans of mushroom soup so there will be more gravy. Other than that very yummy and very tender!

Taste Test Results - Week 2

Kathy - Well, I was making Marlboro Man's Second Favorite Sandwich from Pioneer Woman. I felt like it was good, but I don't think we'll ever make it again. Or if we do I think we'll skip the lemon pepper seasoning. It was a tied vote in our house - one child and I gave it 4 stars, and No1here and another child gave it 3 1/2 stars. The other two don't count!!! I didn't get around to making her Best Chocolate Sheet Cake. Ever. - I have been so busy with activities at my kids' schools this week! Hopefully I'll get to that this weekend!

Cindy - Ooops.... Cindy's is down below! Sorry, I'm late getting this going!!!

Tara - My Taste Test for Tuesday was the Pioneer Woman's Orange Mini-Muffins with Brown Sugar Glaze. They were just "okay". I don't think I will be making them again. My husband and neighbor gave them a 4. My kids did not like them at all! To me the were more like a cake, maybe would be better in a bunt pan??

For me, (Kathy) I definitely give them 5 stars!!! I happened to go over there the next day and there were still a couple left. I just had to take them off her hands!!! ;)

Taste Test Results are in from Tuesday!



Kathy
- Marlboro Man's Favorite Sandwich is definitely a "keeper"! I give it 5 stars for sure!!! no1here filled his sandwich so full that he had to eat it with a knife and fork. So, he only gave it 4 stars. That doesn't count in my mind because he didn't follow the "eating directions"!!!! ;) Typical!!! lol...

Tara - The Best Lasagne. Ever. - The Pioneer Woman's Lasagna turned out pretty darn good! I would have to give it a 5. My husband gave it a 4 because he doesn't like the meat so chunky and he said it needed another layer of noodles. My kids both liked it...I tried to get them to rate it but they didn't quite understand. I'm thinking if they ate it it's about a 4 or 5. Definitely a keeper in my recipe box! And it was really easy to make!!

Cindy - No Peek Casserole - so yummmy...the whole family loved it!! it was so easy....although next time, i will use 1 can cream of mush soup, 1 pack of lipton soup mix and 1 can of water to make the gravy a little thinner and less salty...it is a keeper here!!! The Great Cobbler Debate - sorry, didn't do it....didn't have time or energy!!!

Taste Test Tuesday....

Sorry for not posting a rating for my 'Taste Test Tuesday' meal!! We all rated it a 5...well, me, my hubby and one of the kiddos, the other two are lost in that area! We will for sure make it again, and I PROMISE to get the The Great Cobbler Debate done....can not wait for that one!!

Taste Test Tuesday

Well, since we've entered the blogging world we've come across so many neat food blogs out there with tons of recipes we want to try. So, I've dubbed Tuesday our "Taste Test" day!!! Here's what we'll be experimenting with...

As you can see, The Pioneer Woman is pretty popular! Stay tuned for our results...



No Peek Casserole

2 lbs. cubed round steak
1 envelope onion soup mix
1 cn. cream of mushroom soup
1 cn. mushrooms or 1 pkg. fresh mushrooms

Combine all ingredients in a casserole dish. Cover and bake in a 350 degree oven for 2 hours. (I copied this out of a friend's cookbook - Thanks Denise!)
