My husband is the KING of throwing things together and making a wonderful meal. I didn't feel like cooking the other night, so he goes into the pantry and the fridge and says "I have it!" I wish I had that gift!!! Here's what he came up with...
2 Tilapia fillets
1 can black beans, drained
2/3 cup frozen corn
chopped tomato
juice of 2-3 limes
1/2 tsp cumin
1/2 tsp chili powder
chopped cilantro
salt & pepper
Cook the fish the same way as in the fish taco recipe. In the meantime, mix the rest of the ingredients together in a bowl. Add your cooked fish, and give another stir. We ate this with Tostito Scoops.

VERY impressive! I wish my husband was that daring! He does cook, but he's very "by the book" and doesn't deviate at all from recipes.
Rachel, How funny - I think I'm just like your husband!!! But rule-followers are good to have around!!! ;)
I love fish tacos so I know I'd love this too! Your husband did a terrific job! :0)
How lucky you are to have a husband who cooks and is creative. My poor kids are getting sick of sandwiches for their lunches while I'm at work!
You have a very creative husband. My husband knows how to scramle eggs and make sandwiches- bless his heart.
I wish I could look at a pantry and create a meal like that. Pretty much I need a recipe.
It looks and sounds as if it worked well. Bravo!
Wow, that is awesome! Pass that gift over here! This is just lovely and looks so good!
He has a talent. Dare I suggest he be encouraged mor often. I for one favor as many cooks as the kitchen will hold.
